Smile I have a recipe that fits. I realize it is after the holidays, but this is good anytime.

I do the chicken with the potato flakes. Instead of using an egg wash to hold everything together, I read somewhere (I forget now) and adopted this. It is where I melt butter(it tastes better) and just a few squirts of yellow mustard like you would put on hot dogs.

I mix the dried potato flakes, parmesan cheese, paprika, salt, pepper, garlic powder and parsley flakes. I have this in a deep dish or plastic bag.

As the butter is melting you whisk it together with the yellow mustard. Let it cool after the butter is melted and the mustard is combined and use that to dip your chicken in.

It is so tasty. You have the crunch of the outside and then there is that tang of mustard at the end. You just cook the chicken like you normally would. I usually bake it in the oven on a foil covered cookie sheet.

It is as good cold as right out of the oven.

Enjoy,

shellie
